Build Your Own at Taza Stop in Easton

 

The Taza Stop has been one of the most popular stands at the Easton Public Market since it opened in April as a spinoff of its popular Taza Truck, which served sought-after authentic Egyptian food. The truck is shut down for the winter, so owners Tim and Hala Bonner have updated their Taza Stop menu. In their largest update yet, they made a “Build Your Own” option the centerpiece of their menu.

You can Choose Your Entree — a pita wrap, pita nachos, rice bowl or salad bowl — and your protein — grilled steak or chicken, fried chicken, kofta (Egyptian meatballs), Taameya (falafel), fava beans, marinated eggplant and spicy fried cauliflower. Then you choose your sauce (garlic, tahini, sour cream, etc.) or spread (hummus, baba ghanoush) and toppings (red onions, carrots, Bulgarian feta, pickled portobello mushrooms, cilantro and more).

You still can order a basic Taza Shawarma wrap with beef, chicken or kofta, Pita Wrap with falafel or Kushari bowl with lentils and rice. And you can still order sides of hummus and baba ghanoush and eggplant and more. But Bonner says people often asked for different ingredients and they realized it would be better to follow the lead of restaurants such as Garbanzo or Chipotle and give people options right up front.
